JMC Episodes 7 8 & 9

The pressure test ingredient was Duck, prepared with an Asian theme so out came loads of dumplings, noodles and salads. So did a very tricky four layered chocolate cake which took, to quote cooking doyenne Donna, "precision and accuracy."

Next there was a masterclass with the kids from Bangalow Public School who cooked beef, tasted ocean trout and made a Cherry Clafoutis.

Geez and what about that 8.5mtr pizza taste test, YG was a bit perturbed at the potential for lots of good food going to waste, but then thought it might have been a way of feeding all the crew with left-overs!

(Note....YG watched the pressure test episodes online we we were able to replay and check our hearing to confirm one of the contestants said they had never cooked duck, then mentioned the book where they found the recipe they were making. Ah ha! That might explain how these youngsters have such an inexplicable repertoire (stuff they know by heart) of dishes they seemingly pull out of their fantastic heads. We don't say they can't cook, but unless you've been preparing Duck themed Asian dishes, for say at least half of your junior life, then YG would recommend using a recipe!

Other note....DON'T LICK THE SPOON if your batter has raw eggs in it unless you are absolutely sure where the eggs came from and that they are really fresh. Salmonella is a nasty, nasty bacteria and can sometimes be found in raw eggs.

history, cuisine & culture

Tomato Concassé is yet another French term which means that the tomatoes have been peeled, deseeded and chopped. It is derived from the French word 'concasser' which means to crush or grind.

Food Timeline has some great information on Food Sauces

Clafoutis [pronouced klaaa-foo-tee] is a dish traditionally found in the French region of Limousin. The original recipe leaves the pits in the cherries, which are dangerous for teeth if you forget and take a big bite!

Lucy cooked the Latin American favourite cake called Tres Leches is actually short for Pastel de Tres Leches or "cake of three milks". It is a cake, soaked in milk, sweetended condensed milk and evaporated milk.
