"There is nothing worse than a wonky dish" and according to George, the way to avoid wonkyness, is to learn basic skills and techniques.

The first skill is to whip cream by hand (but YG figures if you are preparing a dish that calls for whipped cream, you are likely to have access to a mixer of some sort, otherwise get set to whisk fast, for a long time).

Next task, shelling peas and estimating how many of them make up 300grams (which George assures us will "test speed and accuracy". Not many folks actually shell peas any more unless they grow them. So if you want to try shelling, then get out there into garden world and plant some peas, be patient and then pick some. (You could always try finding some in your local farmers market.)
